Author: Rose ElliotRose Elliot has created more than 100 healthy recipes, for instant energy and vitality throughout the day. The quick, clear and simple recipes include Porcini Risotto; Honey-roasted Aubergines; Chickpea Balti and Stickey Ginger cake. This lively, up-beat cookbook shows just how pleasurable and healthy vegetarian food can be.

The book is divided into sections for breakfast, lunch and dinner, with appetising names such Vitality-boosting lunches, sexy soups and wicked puddings.

One of the nice touches in the book that I found really useful was the short "Storecupboard basics" section at the beginning. Here Rose Elliot lists all the ingredients that you should keep stocked up on and from which the vast majority of recipes in the book can be made. This has made my monthly shop far easier and ensures that I can always turn to the book with the knowledge that I'm likely to have everything that I need.

The majority of the recipes also have a quick explanation of the health benefits they will give you so you can enjoy your food with the knowledge that it not only tastes great but that it's also good for you.

This is one of those books that when you first page through it you keep saying to yourself, "ooo, that's sounds nice" or "oh, I've got to make that", yep, it's just packed full of really good recipes. I've only made a few so far but I have to say they were as good as I'd imagined and were really easy to make.
